‘BY-EYE’ POTATO SALADIngrid Lynch The 2007 1st place potato salad is my mother’s recipe every ingredient amount is “by eye” the amounts depend on how many people you plan to serve. I’ll approximate the ingredient amounts for a med-large sized bowl. I like to make it the night before, to let the ingredients absorb into the potatoes and, to see if it needs a little more of this or that (spices or dressing) the next morning.
